Overview
Fried rice should be easy.
But most of the time, it turns into a whole cooking sessionβprep the meat, cook it, chop everything, then finally make the fried rice.
Thatβs not what this is.
Iβve got a toddler who loves fried rice, so this needs to be something I can throw together quickly, not something I plan my evening around.
The trick is simple:
Batch prep your protein in advance.
Also, this is a great way to sneak in vegetables without making a big deal out of it. I usually go with green beans and carrotsβsimple, works every time.
Bulk Protein Prep (Do This Once, Well in Advance)
- β Buy pork, chicken, or whatever protein is on sale
- β Roast in the oven until cooked through
- β Let it cool
- β Slice and dice into small pieces
- β Portion and freeze
Thatβs it.
When you need it:
- β Take out a portion
- β Defrost quickly in the microwave
- β Use it straight away
Ingredients (for 1 quick batch)
- β Cooked rice (preferably day-old)
- β Pre-cooked protein (defrosted)
- β Eggs
- β Garlic
- β Onion
- β Carrots (finely chopped)
- β Green beans (finely chopped)
- β Light soy sauce
- β Dark soy sauce
- β Oyster sauce
- β White pepper
- β MSG (see note on why I use it)
- β Oil
Step 1 β Egg First
- β Crack and beat the eggs
- β Cook on high heat
- β Let it set, flip, then break into pieces
- β Set aside
Step 2 β Prep
- β Chop garlic
- β Chop onion
- β Chop carrots and green beans into small pieces
- β Defrost your protein
Step 3 β Start Cooking
- β Heat oil over mediumβhigh heat
- β Add garlic
- β Cook for ~30 seconds
Then:
- β Add onion, carrots, and green beans
- β Cook for 2β3 minutes
Step 4 β Rice + Protein + Seasoning
- β Add rice
- β Add pre-cooked protein
- β Add cooked egg
- β Add:
- β Light soy sauce
- β Dark soy sauce
- β Oyster sauce
- β White pepper
- β MSG
Turn heat up to high and mix everything through.
Youβre aiming for:
- β evenly coated rice
- β not too wet
- β not too saucy
Notes
- β High heat matters β this gives fried rice its texture
- β Cooking the egg separately avoids messing up the rice
- β This is about speed and consistency, not perfection
